Ingredients
- 4 eggs room temperature
- 1/2 cup of butter; unsalted; room-temperature
- 1 whole lemon
- 1 1/4 cup of granulated sugar
- 1/2 teaspoon (splash) of vanilla
- 1 9" frozen pie crust defrosted
- 1/2 teaspoon of powdered sugar to garnish
- 1/2 teaspoon of lemon zest to garnish
Instructions
- Preheat the oven to 350 degrees
- Start by cutting the lemon into wedges and remove the seeds.
- Put the lemon wedges in the blender, including the rind, but minus the seeds 😉
- Add the eggs, butter, granulated sugar, and vanilla, to the blender, and blend until nice and smooth
- Pour the blender mixture into the already made pie crust
- Bake for about 45 minutes
- Remove from the oven, let it cool down for about 10 minutes, dust with powdered sugar, and garnish it with lemon zest and a few lemon slices.
- You can serve warm or let it cool down completely.
Notes

1 pie crust; 1 blender
- You can add as much vanilla as you like, lemon zest, and powdered sugar!
- If there are leftovers, which I doubt, put it in the refrigerator, get up in the middle of the night while others are asleep, and have a slice of pie!
